Lamb Shanks are best slow cooked. Remove all packaging and rub the shanks with a little olive oil or butter, and season. Place shanks in a roasting tray, add fresh herbs, a chopped onion and some garlic cloves for flavour, if desired. Add 200ml of water (or 100ml water & 100ml white wine) to the tray to keep moist. Cover with foil and bake in a preheated oven at 160℃ for 2-2.5 hours. The meat should be tender, juicy & falling off the bone.
